Chicken Bacon Ranch Grilled Cheese

Grilled cheese…the ultimate comfort food!  I love a good white bread, American cheese grilled cheese with a warm bowl of tomato soup.  It’s the perfect rainy day food.  I also love to try more “grown up” versions of grilled cheese.  I like to try out different cheese, sauce, and meat combinations.

One rainy Saturday, I had a hankering for a grilled cheese.  It just so happened to be “Sandwich Saturday” in our house (check out my post on how I save money by doing “theme” meals). I wanted to try something other than the same old grilled cheese this time.  I had some Greek yogurt that was about to go bad, so I decided to make some ranch dressing with it.  And what goes good with ranch?  Why, bacon of course!  (Ok, bacon goes good with everything).  Then, the idea came to me…Chicken Bacon Ranch Grilled Cheese!

I grabbed a loaf of sourdough bread, chicken tenderloins, and some sliced provolone cheese.  I really wanted the chicken to have that great ranch flavor, so I decided to marinate it in the Greek yogurt ranch dressing I had made.  I set about half of the dressing aside to drizzle over the chicken. I fried up the chicken in my non-stick skillet until it was beautifully browned on both sides.  I didn’t use anything to grease the pan because I figured the yogurt had enough fat in it to keep it from sticking to the pan.  (It may have stuck had I used a different type of pan, but it cooked perfectly in my non-stick skillet.)

Once my chicken was cooked through, I heated up the griddle and buttered my sourdough bread.  I placed the bread (butter side down) on the hot griddle and listened for the sizzle.  I placed 3-4 pieces of chicken on top of the bread then generously drizzled more ranch over the chicken.  Then, I placed about 3 slices of bacon on top of the chicken and a slice of provolone over the bacon.  I topped it with another piece of sourdough (butter side up) and smushed it all down with my spatula.  I waited about 2 minutes until the bread was nice and golden underneath, then flipped it over to toast the other side.

My family loved this meal and it was super filling too!  My 9 year-old has requested this on several occasions since I first made it.  If you have kids who actually eat vegetables (unlike mine), this sandwich would be great paired with a simple side salad.  Also, if you want to fry real bacon, you could cook the chicken in the bacon grease.  I am not a fan of my house smelling like bacon so I usually buy the fully-cooked bacon that you can just heat up in the microwave.

Here’s What You Will Need to Make This Sandwich:

Sourdough Bread (I love this kind!)

Chicken Breast Tenderloins

Fully-Cooked Bacon (This is what I buy.)

Sliced Cheese (Whatever you prefer…I love provolone.)

Margarine

Plain Greek Yogurt (I only use this one.)

Packet of Ranch Seasoning

Buttermilk

Cheesy, melty and oh so delicious grilled cheese with chicken, ranch, and bacon.

Yields4 Servings

 1 lb Chicken breast tenderloins (halved)
 1 pkg. Fully Cooked Bacon
 8 slices Sourdough Bread
 4 slices Cheddar or Provolone Cheese
 4 tbsp Margarine
Ranch Dressing and Marinade
 1 ½ cups plain, Greek Yougurt
 6 oz Buttermilk
 1 pkg. Ranch seasoning

Make the ranch dressing marinade by whisking together the Greek yogurt, buttermilk, and packet of ranch seasoning until well combined. Pour half of the marinade into a gallon sized Ziploc bag and reserve the other half for later.

Place chicken into Ziploc bag with marinade and seal tightly. Allow chicken to sit in fridge to marinate for at least 2 hours or overnight.

Heat a large non-stick skillet over medium high heat. Place chicken in hot skillet and cook on one side until golden brown. Flip chicken over and cook until golden brown. Be sure chicken is fully cooked (no longer pink) before removing from skillet.

While chicken is cooking, heat bacon according to package directions.

Heat griddle or separate pan. Spread margarine onto one side of bread slices. Place bread, margarine side down, onto griddle.

Layer bread with 3 - 4 pieces of chicken, a drizzle of the reserved ranch dressing, 2 slices of bacon, slice of cheese, and additional slice of bread on top (margarine side up).

Cook until bread is golden brown on the bottom. Flip sandwich over and cook until that side is golden brown on the bottom.

Remove from griddle and place on plate. Enjoy the melty, cheesy, bacony goodness!
